Touchdown Tortilla Bowls

These great taco salads are perfect for the big game. Let each person pick their own toppings and make their own "Touchdown."
 

Ingredients

  • 2 cups cooked, diced or shredded fajita seasoned chicken
  • 2 cups cooked, drained and seasoned taco meat or beef fajita meat
  • 4 cups prepared Mexican or Spanish rice, divided if doing both meats
  • 4 cups refried or pinto beans
  • 12 tortilla bowls
  • Any assorted toppings/sides you like such as:
  • Shredded lettuce
  • Shredded cheese
  • Tortilla chips
  • Onions, chopped
  • Diced bell, green chili peppers and/or jalapenos
  • Sliced olives
  • Diced tomato
  • Sour cream
  • Salsa
  • Hot sauce
  • Guacamole
 
Method

Mix the rice and meat equally. In the bottom of each bowl, put a scoop, approximately 1/3 cup, of each meat mixture and a scoop of beans in each. These can be kept warm in the oven for a short time. Let each guest top their own bowl as desired for their own "Touch Down".
