Touchdown Tortilla Bowls

These great taco salads are perfect for the big game. Let each person pick their own toppings and make their own "Touchdown."
Ingredients
- 2 cups cooked, diced or shredded fajita seasoned chicken
- 2 cups cooked, drained and seasoned taco meat or beef fajita meat
- 4 cups prepared Mexican or Spanish rice, divided if doing both meats
- 4 cups refried or pinto beans
- 12 tortilla bowls
- Any assorted toppings/sides you like such as:
- Shredded lettuce
- Shredded cheese
- Tortilla chips
- Onions, chopped
- Diced bell, green chili peppers and/or jalapenos
- Sliced olives
- Diced tomato
- Sour cream
- Salsa
- Hot sauce
- Guacamole

Method
Mix the rice and meat equally. In the bottom of each bowl, put a scoop, approximately 1/3 cup, of each meat mixture and a scoop of beans in each. These can be kept warm in the oven for a short time. Let each guest top their own bowl as desired for their own "Touch Down".
