Three Cheese Chicken Enchiladas

These enchiladas are quick and easy to make, and so delicious. Just fill with chicken and cheese, bake and top with your favorite salsa.
Ingredients
- 1/2 cup vegetable oil
- 8 10 inch flour tortillas
- 1 cup sour cream
- 4 oz cream cheese, softened
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cup cooked shredded chicken
- 2 cup shredded Monterey Jack cheese divided
- 1 cup shredded sharp cheddar cheese
- 1/2 cup chopped green onion
- 2 cup salsa (your favorite)

Heat oil in large skillet, dip each tortilla in hot oil coating lightly, set aside. Mix sour cream and cream cheese until smooth. Add remaining ingredients except 1 cup Monterey Jack, salsa and green onions. Put 1/2 cup of mixture in center of each tortilla, fold edges to overlap center and place seam side down in a 9 X 13 casserole. Bake for 15 minutes at 350 degrees. Pour salsa evenly over top and continue baking for 15 minutes. Sprinkle remaining cheese over top and return to oven until cheese is melted. Top with green onions.
Notes: You can also use corn tortillas. Your preference.
