The Ruths' Enchiladas

Corn tortillas filled with avocados, cabbage, cheese, ground beef and sausage in a mild tomato sauce.
Ingredients
- 24 corn tortillas
- 1 quart chunky spaghetti sauce
- 2 ripe avocados
- 8 oz cream cheese
- 6 oz can sliced olives
- 2 cups cabbage, grated very fine
- 1 cup cottage cheese
- 1 cup grated onion
- 1 cup four cheese Mexican blend
- 1 lb ground beef
- 1/4 lb bulk sausage
- 1/2 cup vegetable oil

Method
Brown beef and sausage then set aside. Pour spaghetti sauce in skillet and heat to simmer. Mix cream cheese, avocados, olives, cottage cheese, cabbage, onion, and Mexican cheese. Heat oil in skillet until it just starts to smoke, reduce heat and drop tortilla in for 3 seconds. Move fried tortilla into hot tomato sauce, flip, and place in 9 x 13 greased pan. Scoop 1/4-1/2 cup of cheese and cabbage mix and place in tortilla. Roll up and lay on seam side. Repeat until filling is used up. Mix leftover tomato sauce with meat and pour over filled tortillas. Top with grated cheese and bake at 350 degrees for 45 minutes to 1 hour.
