Tex Mex Barbecue Tacos


Sirloin steak is marinated, sliced thin and grilled until tender. Serve in flour tortillas with cheese, sour cream, tomatoes, lettuce and onion.



Ingredients:

  • 2 lbs well trimmed boneless sirloin steak, cut into 1/4 inch strips
  • Marinade:
  • 1/4 cup red cooking wine
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 2 chipotle peppers in adobo sauce, pureed
  • 2 teaspoons oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1 teaspoon prepared mustard
  • Tacos:
  • 10 6 inch soft flour tortillas
  • 1 cup sour cream
  • 2 medium tomatoes, diced
  • 1 cup shredded lettuce
  • 1/2 cup thinly sliced green onions
  • 2 cups shredded cheddar cheese

Method

Place steak strips in a gallon size sealable bag. Shake all marinade ingredients together in a jar. Pour over steak strips. Seal and refrigerate 2-4 hours, turning often. Prepare charcoal or gas grill to medium high heat. Drain marinade from bag and discard. Grill steak strips 3-4 minutes on each side or to desired doneness. Cover and keep warm. Lightly grill tortillas 10-15 seconds on each side. Immediately assemble tacos by spreading about 1 tablespoon sour cream down center of each tortilla. Add 2-3 sirloin strips to each. Add tomatoes, lettuce, green onions and cheese as desired. Roll up and serve immediately.

Notes: These are great for an outdoor meal when entertaining guests. Everyone assembles their own.
