Fried rolled tortillas filled with corned beef that can be served with salsa, quacamole, and sour cream.
Ingredients
- 1 can corned beef
- 1 pkg of 20 count corn tortillas
- 1/2 cup low colesterol corn oil
- wooden toothpicks

Method
To make corned taquitos: Heat oil in large pan. Warm the tortillas. Add 1 tbsp of corned beef in each tortilla. Roll tortilla tightly and secure with toothpick (to prevent from opening while cooking in hot oil). Cook until tortilla is crispy golden brown on all sides. Remove toothpicks. Serve with salsa, guacamole or just plain sour cream as a dip. Enjoy!
