Taco- Rice and Cheese


This layered casserole begins with cooked rice on the bottom, covered with taco-flavored ground beef, sliced tomato, salsa, and shredded Mexican-blend cheese. It's served with sour cream, salsa and Tabasco sauce.



Ingredients:

  • 1 cup uncooked rice
  • 1 onion, sliced
  • 1 lb. ground beef
  • 1 package of taco seasoning mix
  • 1 cup water
  • 1 large tomato, sliced
  • 1 jar salsa
  • 4 cups Mexican-blend shredded cheese
  • 1 container Sour Cream  
  • Bottled hot sauce

Method

Preheat oven to 350 degrees F. Cook rice according to package directions. Meanwhile brown beef and onion. Add taco seasoning mix to beef and prepare according to package directions, using the 1 cup water. Spread rice in 13x9x2-inch baking dish. Spoon taco-seasoned beef mixture evenly over rice. Place sliced tomato on top of beef; spoon about 1/2 of the jar of salsa evenly over this. Cover generously with cheese; bake in oven for 10-15 minutes or until cheese is melted, and looks good. Serve warm with Sour cream, remaining salsa, and hot sauce.

Notes: This is the first dish that I cooked for my wife almost 6 years ago, and it still remains her favorite. The best category that I can place this into is a Mexican Lasagna.
