Taco Turkey Meat Loaf

This turkey meatloaf is a light and healthy meal. The taco seasoning, onion, tomato and Monterey Jack cheese really add a great taco flavor.

Ingredients
  • 1 envelope taco seasoning
  • 1/2 tsp ground black pepper
  • 1 small onion, grated with juice
  • 2 cloves garlic, grated
  • 1/4 cup plain bread crumbs
  • 3/4 cup cooked brown rice
  • 2 eggs, beaten
  • 1/2 cup tomato sauce
  • 1/4 cup romano cheese
  • 3 lbs ground turkey
  • 1/2 cup shredded Monterey Jack cheese
  • Topping:
  • 1 cup tomato sauce
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup romano cheese
 
Method

Mix together eggs, taco seasoning, pepper, garlic, onion, cheeses and bread crumbs. Add turkey and mix thoroughly. Grease sheet pan with 2 tsp olive oil. Form two loaves of meat mixture on pan. Top loaves with the tomato sauce and cheeses. Bake at 375 degrees for one hour- 1 hour 15 min. Meat temperature should register 180 degrees.
