Sweet and Spicy Beans

These beans are savory and sweet with a little bit of heat to finish them off.
Ingredients
- 2 packages Linguisa (pork)
- 1 big white or yellow onion
- 1 large bell pepper
- 3 celery stalks
- 1 bag Northern beans, soaked overnight
- 1/2 cup brown sugar
- Red pepper flakes
- Garlic salt
- Salt
- Pepper
- Poultry seasoning
- Seasoned salt

Method
In large pan, boil beans to soften, adding enough water to cover top. Add 3 or 4 shakes poultry seasoning, seasoned salt, garlic salt and black pepper. While beans are cooking, cut Linguisa into 1 inch chunks and slowly brown well on medium high heat, stirring to avoid burning. Drain on paper towels. By now, the beans should be somewhat softened. Add cut up onions, bell pepper and celery to sausage grease and sautee until done, or softened. Reserve small amount of grease to saute vegetables. Add Linquisa to beans, then veggies and let cook to join flavors. Add a couple of shakes of red pepper flakes and then brown sugar. The taste you are seeking is sweet with a spicy aftertaste.
Notes: You do not want to over boil the beans, you do not want to make it starchy.
