Sweet and Sassy Mexican-Style Squash

Banana squash cubes are cooked in butter and olive oil, and seasoned with jalapeno peppers, cumin and brown sugar.
 

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 3 cups cubed banana squash (uncooked)
  • 2 to 3 seeded and diced fresh jalapeno peppers
  • 1 teaspoon ground cumin
  • 2 tablespoons brown sugar
  • Salt and pepper to taste

Method

Over medium heat, melt butter in a wide saute pan. Add olive oil. Add the squash. Saute for approximately 7-8 minutes until it begins to soften. Add the jalapenos and cumin, salt and pepper. Continue to saute until squash is soft but not mushy, another 5-7 minutes. Just before plating, sprinkle over the brown sugar and lightly toss. Serve immediately.

 

Notes: You may increase or decrease the number of jalapenos to suit your heat tolerance. Also increase or decrease the brown sugar to taste.
