Super Easy Mexican Chili

Ground turkey, black beans, pinto beans and zucchini combine to make this healthy version of Mexican chili.
Ingredients
- 1 lb ground turkey
- 1 15 oz can black bean, don't drain
- 1 15 oz can pinto beans, drained
- 1/2 onion, chopped
- 3 garlic cloves, chopped
- 1 tomato, diced
- 1 small zucchini, diced
- 1 packet taco seasoning
- 1 cup chicken stock
- 1/4 cup olive oil

Method
In a skillet saute ground turkey until brown and set aside. In a pot heat olive oil, add onions and garlic and cook until onions become translucent, about 3 minutes. Add zucchini and tomato and cook another 3 minutes. Finally add chicken stock, taco seasoning, black beans, pinto beans and browned ground turkey.
Notes: This recipe can be served with tortilla chips on the side.
