Spinach Quesadillas

A counter-top grill with a lid is used to heat the flour tortillas that are filled with a vegetable mixture & shredded cheese, then folded in half.
Ingredients
- 1 Tb. margarine
- 1 Tb. extra virgin olive oil
- 20 oz. fresh or frozen chopped spinach
- 2 Tb. chopped garlic
- 1 med. white onion, chopped
- 1/2 red bell pepper, chopped
- 1/2 c. sliced mushrooms, fresh or canned (drained, if in can)
- 1 c. roma tomatoes, chopped
- 2 Tb. Seasoned Salt (or to taste)
- 1 T. Garlic Pepper Blend (or to taste)
- 2 dashes Cayenne Pepper
- 2 c. shredded cheese--your choice--Mexican Blend, Pepper Jack, etc.
- 4-6 Large Flour Tortillas
- Countertop Grill with Lid
- Sour Cream, Salsa, Guacamole, and Tortilla Chips to accompany.

Melt margarine and olive oil in large skillet. Add garlic, spinach and all other veggies. When cooked, about 5-10 minutes, transfer to wire strainer lined with paper towels and placed over a bowl. Squeeze liquid from mixture. Return veggies to skillet; add seasonings and about 2 handfuls of cheese. Stir until cheese is melted; remove from heat. Preheat the countertop grill, and place 1 tortilla on grill. Sprinkle some of the remaining cheese on half the tortilla, add filling on top of cheese. Sprinkle a little more cheese on filling. Fold other half of tortilla over, and close lid. Takes about 2 - 3 minutes per quesadilla. Depending on the size of your grill, you may want to use smaller tortillas, and use a whole tortilla on both the top and the bottom. Cut pizza-style into wedges with a pizza cutter, and garnish with desired accompaniments.
Notes: This is a quick, flavorful meal that will impress your guests! Use hot peppers if that suits your tastes, and shredded or cubed cooked chicken can be added as well. The filling will keep in the fridge, so you can make this for 1 serving at a time, or more!
