Spinach Cheese Onion Enchiladas

This recipe combines cheeses, spinach, egg, chilies and tortillas, and bakes them in red enchilada sauce.
 

Ingredients

  • 3 cheeses: mozzarella, Monterey Jack and cheddar cheese, grated
  • 1 cup fresh cooked spinach
  • 1 egg, beaten
  • 1/2 can mild green chilies, chopped
  • 2 cans red enchilada sauce
  • 14 tortillas

Method

Saute all ingredients together (except enchilada sauce and tortillas.) Warm tortillas in microwave 25 seconds. Spoon mixture onto tortillas and roll up. Pour one can sauce in an oblong pan and place filled tortillas in pan. Pour other can of sauce over the enchiladas. Bake 15-25 minutes at 350-375 degrees. Check enchiladas after 10 minutes to see if cheese is slightly browning. If so, take out and serve with any garnish.
