Spicy Spinach Enchilada Dip

Cream cheese, spinach, refried bean, enchilada sauce and plenty of cheese are baked until bubbly and served with tortilla chips.
 

Ingredients

  • 1 can refried beans with jalapenos
  • 4 oz softened cream cheese
  • 1/2 cup Mexican blend shredded cheese
  • 2 tbsp hot sauce
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 1/3 cup green chili enchilada sauce
  • 1 box thawed chopped spinach
  • 4 oz sour cream
  • 3/4 cup red enchilada sauce
  • 1 cup Mexican blend shredded cheese

Method

Preheat oven to 425 degrees. Combine first 8 ingredients in medium sized bowl. Stir until well blended. Spread into a shallow dish like a glass pie plate or similar dish. Cover with a layer of sour cream, followed by enchilada sauce and finish with a layer of cheese. Cook for approximately 20 minutes or until cheese is melted and bubbly. Serve with chips.
