Spicy Potato Bake

Potatoes in a creamy, cheesy sauce flavored with green chilies for just a hint of spice. Bake in the oven or prepare in a crock-pot.
Ingredients
- 4 to 5 lbs potatoes, boiled peeled and sliced
- 1 large can chicken soup
- 3/4 cup milk
- 1 1/2 cup water
- 2 small onions, diced
- 7 oz can diced green chilies
- 24 oz shredded Mexican blend cheese

Method
In large pan or crock pot, mix soup, water, onions and chilies. Cook on low heat about 15 minutes until onions start to soften. Add cheese and stir in potatoes. Transfer to crock-pot or oven. Cook at 225 degrees for 3 hours.
Notes: Add diced chicken for meat, if desired.
