
Chicken tenders are seasoned with taco mix and grilled along with a packet of onions and peppers, then served with tomato, avocado, cheese salsa and sour cream to make your own fajitas.
1. Pour 4 tbs of oil on large plate. Pour Taco Bell seasoning on separate large plate.
2. Take each chicken tender and roll in oil first, then in seasoning until completely coated.
3. Lace chicken onto skewers.
4. Heat grill to med-hi heat.
5. Place onions and bell peppers on 1 aluminum foil square. Drizzle with remaining olive oil. Pour any remaining taco seasoning from rolling chicken onto the veggies. Top with second square of foil. Seal foil on all sides by folding each edge over twice. Shake gently to coat veggies in oil & seasoning.
6. Place foil pouch on grill 4-6 inches above heat for 5 minutes.
7. Turn pouch over and add skewers to grill. Grill another 3 minutes. Turn chicken and cook 3 more minutes or until chicken is cooked through.
If you are using the beans:
1. Drain beans and rinse.
2. Put beans in small saucepan. Add seasonings. Heat over med-low heat 10 minutes or until heated through. Keep warm.
Lay out chicken, onions & peppers and beans with tomato, avocado, cheese, sour cream, salsa and tortillas, so your guests can make their own fajitas!
