Southwestern Quinoa

Quick and easy quinoa side dish loaded with spicy Southwestern flavors.

  • Total Time: 25 minutes


1 cup Quinoa, rinsed well and drained
1½ cups Chicken or Vegetable Broth
1× 10 oz can Spicy Diced Tomatoes With Green Chili With Juices, such as ro-tel
1 cup Frozen Corn
½ cup Onions, diced
1 tsp Chili Powder
½ tsp Ground Cumin
½ tsp Kosher Salt
⅓ cup Chopped Fresh Cilantro
½ Lime, juiced
1 Avocado, diced


In a medium saucepan over medium high heat, add the quinoa, broth, Ro-tel, corn, onion, chili powder, cumin and salt. Bring to a boil, then cover and reduce heat to medium low. Simmer for about 20 minutes, or until the liquid is fully absorbed. Remove from the heat. Just before serving, stir in the cilantro and lime juice. Garnish with avocados.

Helpful Tips:

Serve it as a warm side dish or as a cold salad. Add a can of well drained beans for a one pot meal.
