Southwestern Black Bean Chorizo Soup

Chorizo sausage, pickled jalapenos and cayenne pepper give this black bean soup a distinctive flavor kick.
 

Ingredients

  • 1 chorizo sausage link
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • 1/4 tsp cayenne
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tsp chopped pickled jalapeno (jarred nacho slice variety)
  • 1 4.5 ounce can diced green chiles
  • 1 15 ounce can black beans
  • 1 15 ounce can refried black beans
  • 2 cans chicken broth or stock
  • (optional garnish)
  • Sour Cream
  • Shredded Cheese
  • Diced red onions

Method

In a large sauce pan, saute sausage, onion, green pepper and garlic in olive oil until sausage is brown and vegetables are tender, about 3 minutes. Add cayenne, cumin, and chili powder and cook for another minute. Add two cans of beans, jalapenos, green chiles, and chicken broth. Bring soup to a boil, then reduce heat to low and simmer for about 30 minutes to an hour, adding water if necessary to reach desired consistency.

 

Notes: Garnish with fresh cilantro as an optional garnish.
