Southwest Breakfast Quiche

This easy to make quiche makes a tasty breakfast, brunch, lunch or dinner dish--and great leftovers too!
Ingredients
- 1 unbaked refrigerated deep dish pie crust
- 8 slices bacon, cooked and crumbled
- 1 1/4 cups ham, cut in small cubes
- 1/4 lb mild pork sausage, cooked and crumbled
- 1/4 cup green bell peppers, diced
- 1/4 cup red bell peppers, diced
- 1/2 jalapeno pepper, diced
- 1 1/2 cups shredded Mexican cheese
- 8 large eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dijon mustard
- 1 1/4 cups heavy whipping cream
- 1 cup salsa
- 8 oz sour cream
- 4 green onions, diced

Preheat oven to 350 degrees. Place pie crust in a glass pie dish. In crust, arrange bacon, ham, sausage, green and red peppers, jalapenos and cheese and set aside. In a large mixing bowl, beat together the eggs, salt, pepper, mustard and cream. Carefully pour into pie crust. Place dish onto a baking sheet lined with aluminum foil. Bake uncovered until center is set, about 50-55 minutes. If crust is getting too brown and center is not set, place in microwave the last 5-8 minutes. Remove from oven and let set 5 or 6 minutes. Cut into wedges and place on a serving plate. Top with 1 tablespoon salsa, sour cream, and green onions.
Notes: I love making quiche and have tried many combinations of ingredients. This is very easy and looks impressive to serve for special occassions.
