Southern Mexican Chicken Mac 'N Cheese

I'm Southern and my honey is Spanish so I am always combining the two. Here is a fabulous recipe I came up with. Enjoy!!

  • Prep Time: 30 min
  • Cook Time: 15-20 min
  • Total Time: about an hour


1 box Rotini Pasta
½ Stk Butter
1½ cup Milk
¾ Lg Velveeta Loaf
4 oz Cream Cheese
½ cup Plain Yogurt
2 Jalapenos
½ tsp Roasted Garlic In Olive Oil
5 Leg Quarters Deboned, southern fried chicken left over
5 Diced Plum Tomatoes
1 tsp Adobo Sauce
¼ tsp Cumin
½ tsp Cayenne
1 tsp Chili Powder
½ tsp Onion Powder
1½ cup Crushed Tomatoes
2 tsp Olive Oil


1. Cook pasta til al dente, drain and set aside.

2. In skillet melt butter; add milk, velveeta, cream cheese, and yogurt. Stir til melted and creamy. Then mix with pasta and set aside.

3. Debone chicken. If you don't have leftover fried chicken you can boil some up. Add all the rest of the ingredients to pan and stir occasionally for 15 minutes til flavors are blended. Layer chicken in bottom of 9x13 and top with mac'n cheese mixture. Cook in oven for 15 -20 min. Melt cheese on top for last 5 minutes if you want to.
