South of the Border Vegetable Soup

Salsa and cilantro give this healthy vegetable soup a Mexican flare. Top with packaged dinner roll dough and bake for an en croute presentation.
 

Ingredients

  • 1 small Vidalia onion, chopped
  • 1 tablespoon garlic, chopped
  • 2 14 oz cans chicken broth
  • 1 28 oz can diced tomatoes, with juice
  • 1 11 oz can whole kernel sweet corn, drained
  • 1 19 oz can dark red kidney beans, rinsed and drained
  • 1 10 oz package frozen spinach
  • 1/2 teaspoon coarsely ground pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 cup medium salsa, or hot salsa
  • 1 8 oz can refrigerated crescent dinner rolls
  • 1 cup Mexican style four cheese blend, natural finely shredded
  • 1 additional tablespoon chopped fresh cilantro for garnish
  • additional 2 cups shredded cheese and 1 cup salsa to serve

Method

Spray bottom of large sauce pan generously with cooking spray. Saute garlic and onion over medium heat until translucent. Add broth and diced tomatoes with juice and stir. Add corn, kidney beans and frozen spinach and stir until heated through. Add salsa, cilantro, pepper and stir. Preheat oven to 375 degrees. Pour soup evenly into 4 oven safe bowls. Allow any remaining soup to cool, then refrigerate or freeze for future use. Open crescent rolls and break into 4 rectangles. Spread 1 rectangle on top of each soup bowl and crimp over edge of bowl, allowing dough to separate slightly but not break apart at serrated edge. Gently poke a knife into dough several times to allow additional steam to escape. Carefully place bowls on a sturdy cookie sheet and place in oven. Bake for 10-12 minutes until golden brown. During last 2 minutes of cooking time, sprinkle 1/4 cup cheese on each. Return to oven and bake until edges are golden brown and cheese is melted. Remove from oven and allow to cool for 5 minutes. Garnish with additional cilantro. Serve with salsa and shredded cheese on the side.
