South of the Border Steak Slaw

A cabbage, spinach and black bean slaw is topped with grilled, Mexican seasoned steak and served with a creamy chipotle dressing.
 

Ingredients

  • 1 packet taco seasoning mix
  • 1 pound boneless sirloin steak, cut 1 inch thick
  • 1 10 oz bag angel hair coleslaw mix
  • 1 15 oz can black beans, rinsed and drained
  • 1 11 oz can whole kernel corn with peppers, drained
  • 2 cups baby spinach
  • 2 tomatoes, chopped
  • 1/4 cup snipped basil
  • 1/4 cup bacon bits
  • 1/2 cup ranch style dressing
  • 1 tbsp chopped chipotle pepper in adobo sauce
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp minced green onion
  • Garnish:
  • Shredded Mexican blend cheese
 
Method

Rub steak with seasoning mix. Broil or grill 5 inches from heat source for 8-10 minutes or until medium rare, turning once. Place coleslaw mixture, beans, corn, spinach, tomatoes, basil and bacon in a large bowl. In a small bowl combine dressing, chipotle pepper, lime juice, oil, and onion and mix well. Toss with slaw mixture to evenly coat. Place on a platter and thinly slice steak on the diagonal across grain. Arrange on top of salad and garnish with cheese.
