South of the Border Steak Slaw

A cabbage, spinach and black bean slaw is topped with grilled, Mexican seasoned steak and served with a creamy chipotle dressing.
Ingredients
- 1 packet taco seasoning mix
- 1 pound boneless sirloin steak, cut 1 inch thick
- 1 10 oz bag angel hair coleslaw mix
- 1 15 oz can black beans, rinsed and drained
- 1 11 oz can whole kernel corn with peppers, drained
- 2 cups baby spinach
- 2 tomatoes, chopped
- 1/4 cup snipped basil
- 1/4 cup bacon bits
- 1/2 cup ranch style dressing
- 1 tbsp chopped chipotle pepper in adobo sauce
- 1 tbsp lime juice
- 1 tbsp olive oil
- 1 tbsp minced green onion
- Garnish:
- Shredded Mexican blend cheese

Method
Rub steak with seasoning mix. Broil or grill 5 inches from heat source for 8-10 minutes or until medium rare, turning once. Place coleslaw mixture, beans, corn, spinach, tomatoes, basil and bacon in a large bowl. In a small bowl combine dressing, chipotle pepper, lime juice, oil, and onion and mix well. Toss with slaw mixture to evenly coat. Place on a platter and thinly slice steak on the diagonal across grain. Arrange on top of salad and garnish with cheese.
