Sopa (Mexican Rice)
Sopa, a traditional Mexican rice side dish, goes well with just about anything and is easy to make.
Ingredients
- 1 Small finely chopped cooking onion
- 2-3 Cloves of finely chopped garlic
- 1 1/2 cups long grain rice
- 3 cups of water
- 1 10-12 oz. can of tomato or V-8 juice
- olive oil (enough to cover bottom of skillet)
- 1/4 tsp. salt
- large (15") skillet

Method
Heat oil over medium heat. Brown rice, stirring almost constantly so not to burn, until golden or light brown. Add onions and garlic. Stir again until onions are almost fully cooked (transparent). Add tomato/V8 juice and stir until blended with rice. Cook at a low boil until tomato juice cooks down. Add water and salt and stir until blended. Bring to a medium boil and turn heat down to low. Let rice simmer for 15-20 minutes until rice is fully cooked.
Notes: This makes a nice side dish for tacos and other mexican dishes. Especially good with refried beans on the side!
