Sofrito Eggs

Scrambled eggs are cooked with onion, sofrito sauce, topped with American cheese, and served with corn tortillas.
Ingredients
- 1 Tablespoon Olive Oil
- 1 Tablespoon Butter
- 1 small Vadalia onion, chopped
- 3 Tablespoons sofrito
- 5 Large Eggs
- 2 slices American cheese
- 4 Corn Tortillas

Method
Heat oil and butter together in medium skillet, add onions and cook until light brown and soft. Add sofrito and mix until sofrito is warm. Add eggs, one at a time, while stirring to scramble eggs in the skillet. Cook until eggs are set. Turn off heat and place cheese slices on top of egg mixture. Serve with corn tortillas.
