Simple Taco Bake

Ground turkey is cooked, seasoned with taco mix, and spooned on a flour-cornmeal-yeast batter. It's topped with salsa, chips & cheese before baking.
 

Ingredients

  • 1 pound ground raw turkey (or chicken)
  • 1 package (1.25 ounce) taco seasoning mix
  • 3/4 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 2 envelopes rapid rise/quick rise yeast
  • 1 Tablespoon granulated sugar
  • 3/4 cup very warm milk (120-130 degrees F.)
  • 3 Tablespoons corn oil
  • 1 large egg, slightly beaten
  • 1 cup chunky salsa
  • 1 cup corn chips, slightly crushed
  • 1 cup Monterey Jack Cheese, shredded

Method

In a large, nonstick skillet brown turkey until no longer pink. Drain off fat; stir seasoning mix into turkey. Set aside. In a medium bowl, combine flour, corn meal, yeast, sugar, milk, oil and egg. Stir until just combined. Spoon the batter into a greased 8x8x2-inch square baking dish or pan; smooth top. Top the batter with the turkey. Spoon the salsa over the turkey. Sprinkle with chips and cheese. Place the dish or pan on a lower shelf in a COLD oven. Turn oven temperature to 350 F. (This will allow the batter to rise as the oven heats.) Bake until a tester comes out clean, about 25-35 minutes. Remove from oven and let rest 5-10 minutes before serving.

 

Notes: This simple yeast-based dish is fast and easy to prepare. Serve it as a main dish for 4 to 6, or as an appetizer when cut into small bars or squares.
