Shredded Turkey Tacos

A great way to use leftover roasted turkey for a healthy and delicious taco filling.

One Pound of Leftover Roasted Turkey Meat
1 Tbsp Olive Oil
One Small Sweet Onion, sliced into thin wedges.
One Sweet Bell Pepper, color of your choice, thinly sliced
1 tsp Minced Fresh Garlic
1 tsp Ground Cumin
1 tsp Chili Powder
½ tsp Dried Oregano
Salt & Pepper, to taste
1 tsp Cornstarch
½ cup Beer, water or turkey stock


Shred the turkey meat into bite size pieces; set aside. Heat a large skillet over medium heat, add olive oil and sauté onion and pepper until lightly browned and almost tender. Add minced garlic and turkey and cook until garlic is fragrant but do not let it burn. Add the spices and let toast for a few seconds. Mix the cornstarch into the beer to make a slurry and pour into the pan. Stir frequently and cook until the sauce thickens and has mostly soaked into the turkey. Serve with warm tortillas and your favorite taco toppings.

Helpful Tips:

Adjust the amount of beer or cornstarch if the sauce is too thick or too thin. If you like it really spicy, add some cayenne pepper. This is also great for lettuce wraps if you are counting carbs.
