Sausage, Egg and Cheese Wraps

Chorizo sausage, eggs & raisins are cooked, spooned onto a large flour tortilla, topped with cheddar cheese, salsa & sour cream, and rolled up.
Ingredients
- 1/4 lb. fresh (not smoked or cured) lean Mexican chorizo sausage, casing removed
- 1 teaspoon olive oil
- 5 large or 4 jumbo-sized eggs
- 3 tablespoons baking raisins
- 1/2 cup of shredded cheddar cheese
- Salt and pepper to taste
- 4 burrito-sized flour tortilla shells
- Bottled salsa and sour cream, as optional condiments

Method
Add olive oil to a large skillet and heat on medium-high. Use a wooden spoon or a spatula to break sausage up into small pieces in pan. Add raisins and stir until sausage is cooked through, though not necessarily browned. Add eggs to frying pan. Poke eggs to break yolks, and then stir eggs into sausage. Add a light sprinkling of salt and pepper. Stir constantly until eggs begin to set, but are still moist. Remove pan from heat. Microwave tortillas for a few seconds to soften; fill each one with 1/4 of the egg mixture and top with 1/4 of the shredded cheese. Add salsa and sour cream if desired, and then roll shells up like a burrito.
