Saucy Chicken Burritos

These chicken burritos are large and in charge. Serve them with rice and beans and no one will leave unsatisfied.
Ingredients
- 1 15 ounce can, black beans
- 1/4 teaspoon salt
- 1/2 cup chunky salsa
- 1 tablespoon vegetable oil
- 2 boneless, skinless chicken breasts (about 12 ounces)(finely chopped)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground ancho chili
- 1/2 teaspoon ground medium chili powder
- 1/2 teaspoon ground black pepper
- 2 green onions, thinly sliced
- 8 ounces cream cheese, softened
- 2 tablespoons chopped cilantro, divided
- 1 9 ounce box frozen chopped spinach (thawed and squeezed dry)
- 4 whole wheat or reduced fat 8" diameter flour tortillas
- 4 ounces shredded cheddar cheese, mild
- 1 10 ounce can, red enchilada sauce
- 2 ounces crumbled Mexican cheese
- 1/2 cup light sour cream

Pre-heat oven to 350 degrees. Rinse and drain black beans into a small saucepan. Add salt, salsa and stir. Cook over medium heat until warmed, about 3-5 minutes. Turn off heat and set aside. Heat a medium skillet over medium high heat for 1 minute, add oil and swirl around. Toss chicken with next 5 ingredients and add chicken to skillet in a single layer; let cook for 2 minutes. Stir and cook for 2 more minutes. Remove from heat and keep warm. In a medium mixing bowl, combine cream cheese, 1 tbsp cilantro and spinach. Add chicken mixture and stir to combine. Warm each of 4 tortillas in the microwave for 10 seconds each. Use 1/4 of the chicken mixture for each burrito. Pile filling down the center of the tortilla and top with 2 tbsp of black bean mixture and 1/4 of the shredded cheddar. Fold one side in and the other side over to form the burrito. Pour 1/4 cup enchilada sauce in the bottom of a 9 x 13 oven safe baking dish. Place burritos in baking dish and cover with remaining enchilada sauce. Bake for 15-20 minutes or until heated through and bubbling. Combine remaining cilantro with sour cream. Serve burritos with crumbled Mexican cheese and 1/4 of sour cream mixture on top
Notes: These are hearty and can easily be served as a dinner portion with rice and beans on the side.
