Quick and Easy Mexican Skillet


You can eat this right out of the skillet family style at your dining room table. It is also a nice idea to scoop it up with your favorite tortilla chips.



Ingredients:

  • 1 tablespoon olive oil
  • 1/2 palmful fresh cilantro, diced
  • 1/2 small red bell pepper, diced
  • 1/2 small yellow red pepper, diced
  • 1/2 small red onion, diced
  • 1 small can diced green chilies
  • 1 can diced tomatoes
  • Juice of 1 lime
  • 1-2 lbs ground beef
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp all purpose seasoning
  • 2 1/2 cups medium egg noodles, cooked
  • 1 small can tomato paste
  • 1-2 cups shredded Velveeta cheese
  • 2 cups crushed corn chips

Method

To hot skillet, add olive oil. Saute cilantro, red and yellow bell pepper, onion, chilies, and tomatoes with lime juice. Brown beef and salsa with seasonings. Add cooked egg noodles and tomato paste. Stir in shredded Velveeta until combined. Top with crushed corn chips.

Notes: Go easy on chili powder and cayenne pepper if spicy foods aren't for you. Garnish with fresh cilantro and serve with a salad.
