You can eat this right out of the skillet family style at your dining room table. It is also a nice idea to scoop it up with your favorite tortilla chips.
To hot skillet, add olive oil. Saute cilantro, red and yellow bell pepper, onion, chilies, and tomatoes with lime juice. Brown beef and salsa with seasonings. Add cooked egg noodles and tomato paste. Stir in shredded Velveeta until combined. Top with crushed corn chips.
Notes:
Go easy on chili powder and cayenne pepper if spicy foods aren't for you.
Garnish with fresh cilantro and serve with a salad.
