Quesadillas

The easy way to make a south-of-the-border sandwich that everyone likes with cheese, bacon, jalapenos, and tomatoes. Serve with sour cream and salsa.
Ingredients
- 1/2 cup shredded Mexican cheese
- 2 10" flour tortillas
- 1/2 stick butter, room temperature
- 2 jalapeno peppers, minced
- 1/3 cup scallions, chopped
- 1 small tomato, chopped
- 8 slices cooked bacon, chopped
- Sour cream
- 2 tbsp cilantro or parsley

Method
Cook bacon, set aside. Crumble. Cut up peppers, tomato, scallions, cilantro or parsley. Add to bacon and mix up. Butter one side of each quesadilla. Put quesadilla butter side down in frying pan. Layer on cheese first and then all the other ingredients. Top with more cheese and add other quesadilla butter side up on top. Fry till golden brown on bottom and flip to brown the other side. About 5 minutes in all. Good with sour cream.
Notes: Cut into 6 triangles and serve with sour cream, avocado dip or whatever floats your boat.
