Quesadillas

Quesadillas can be either an appetizer or a meal, depending on the filling. The simplest quesadilla is a tortilla filled with cheese and fried. To make the quesadilla heartier, add refried beans, beef, chicken, or shrimp. Typical garnishes are sour cream, salsa, and guacamole.

If you prefer your quesadillas to be vegetarian, you can fill them with your favorite vegetables and cheese. To get you started on ideas, check out our Peppered Spinach Quesadilla recipe.

Although quesadillas originated in Mexico, you can fill them with almost anything. For example, our Italian-inspired Gorgonzola and Fig Quesadilla recipe is filled with fig jam, Gorgonzola, and balsamic vinegar.

For two delicious quesadillas with unique and unexpected flavors, try our Grilled Hot Pepper Pineapple Quesadillas and Sweet Potato Harvest Quesadillas with Cranberry Salsa recipes.

Although your picky-eaters might refuse to eat anything but the basic cheese quesadilla, you can slowly introduce them to new flavors in their quesadillas. Start by adding chicken or beef to the quesadilla, then gradually sneak in refried beans, vegetables, different cheeses, and other interesting ingredients.
