This Mexican flavored casserole is made with chicken and cheese in a creamy sauce, with a base of tortilla chips.

  • Servings: 4-6


3 Boneless Breast Halves, cooked, and cubed (or you may add in 2 skinless boneless thighs in place of 2 breast halves
1 can Diced Green Chilies
1 can Cream of Chicken Soup
4 oz Taco Sauce
½ cup Chicken Broth
1 Packet Dry Ranch Mix
1 pkg Taco Chips or (preferably) Strips
½ – ¾ cup Grated Pepper Jack Cheese & Mild Cheddar


In a sauce pan, combine and heat tomatoes, soups, taco sauce, ranch mix and broth. Line bottom of casserole dish with taco chips. Add mixture of chicken and sauce. Top with grated cheese. Bake at 350 degrees until bubbly and hot. Remove and let set for 10-20 minutes. Garnish with fried onion strips and dollops of guacamole.
