Not Your Momma's Enchiladas

These enchiladas are packed with chicken and cheese to make them perfect when served with rice and beans.
Ingredients
- 6 lbs chicken legs or thighs with bone
- 1 cup cilantro, chopped
- 1 cup green onion, chopped
- 1/2 cup chopped canned or fresh green chilies
- 1/2 cup sliced black olives
- 2 tbsp garlic, chopped
- 2 tbsp ground cumin
- Salt and pepper to taste
- 2 dashes hot pepper sauce
- 16 oz sour cream
- 1/2 cup whipped cream cheese
- 3 cups shredded Colby jack cheese
- 1 can green enchilada sauce
- Flour tortillas

Method
Boil chicken and shred it off the bone. In a bowl combine all ingredients except 2 cups Colby jack cheese and enchilada sauce, and mix well. Place a little green enchilada sauce in baking dish. Fill tortilla with some of the mixture, roll up and place in pan. Repeat until pan is full, and then add remaining enchilada sauce on top of enchiladas. Top with cheese and bake for about 45 minutes at 400 degrees until hot, bubbly and slightly browned.
Notes: This recipe makes a large amount and can be halved.
