New Mexico Abondigos Soup

This soup recipe should be added to the recipe book of every family. Mini meatballs and veggies in chicken broth with avocado, what a meal.
 

Ingredients

  • 1/2 cup white rice
  • 1 1/2 lb ground beef
  • 8 cups chicken broth, low salt
  • 1 large carrot
  • 2 celery stalks, sliced 1/4 inch
  • 1 onion, chopped
  • 3/4 can stewed tomatoes
  • 2 tsp crushed red pepper
  • 1 tsp Mexican oregano
  • Salt and pepper to taste
  • 1 cup bread crumbs
  • 1 egg
  • Chopped cilantro
  • Avocado

Method

Mix beef, rice, bread crumbs, egg, salt and pepper in bowl and shape into small meat balls. Brown in nonstick pan. Fill large saucepan with chicken broth and add carrot, celery, chopped onion and stewed tomatoes. Bring to boil and add red pepper and oregano. Continue to boil and add browned meat balls. Simmer for 1-2 hours and serve with sliced avocado, fresh cilantro and crushed peppers to taste.
