
Cooked ground beef and ground turkey are flavored with taco seasoning mix and layered in a baking dish along with corn tortillas, green enchilada sauce, refried beans, cream of mushroom soup, Rotel tomatoes and Colby-Jack cheese.
Lightly grease a glass baking dish.
In skillet with 1 tablespoon olive oil, crumble and cook the ground beef and ground turkey. When the meat has lost it's red color, add the taco seasoning and mix well. If you used good lean beef then there should be no need to drain any fat.
In the baking dish cover the bottom and sides with the corn tortillas, tearing if necessary to fit. Spread cooked meat in the bottom of the dish. Spread the refried beans straight from the can over the meat. Spread the cream of mushroom soup on top of the beans.
Spread the Rotel tomatoes over the soup. Sprinkle a handful of cheese over the tomatoes. Lay another layer of corn tortillas on top. Pour the enchilada sauce over the top and spread another handful of cheese as the last layer.
Cover with aluminum foil and place in preheated oven at 350 degrees for about 30 min.
Notes:
This recipe can be made as large and as small as you like. If you don't like spicy then leave out the Rotel tomatoes.
