Aunt Debbie's salsa combines roasted New Mexico green chilies, roasted red tomatoes, garlic, cilantro, Mexican oregano, and cumin.
 

Ingredients

  • 25 - Whole New Mexico Green chilies
  • 10 - whole ripe red tomatoes
  • 10 - cloves of garlic, crushed and finely chopped
  • 1/3 cup of finely chopped cilantro
  • 1 teaspoon of Mexican oregano
  • 1 teaspoon cumin
  • 1 teaspoon white pepper
  • 1/2 tablespoon of sea salt
 
Method

Roast your green New Mexico chilies over an open flame, and then peel them. (It is ok if there is a little bit of scorching on them.) Remove stems and set chilies aside. Roast your tomatoes until blackened on all sides, preferably over an open flame. Add your chopped crushed garlic--always use fresh garlic, never the ready-to-use; these garlic cloves I find not do have the same taste as fresh. Add your finely chopped cilantro. Add to chilies and crush both of them together until you get a chunky consistency. Add the rest of your seasonings and you are set to go.

 

Notes: This recipe can also be made with Anaheim chilies, but it is not as spicy.
