Mini Mexican Chicken Pie
These Mexican inspired mini chicken pies are a great way to spice up dinner.
Ingredients
- 1 large chicken breast, cooked and shredded
- 1 can diced green chilies
- 1/2 cup salsa
- 1/4 cup sour cream
- 1 tsp onion powder
- 1/4 tsp salt
- 1/2 cup colby jack cheese
- 1/2 sm can chopped black olives
- 4 pie crusts

Method
Preheat oven to 400 degrees F. Cut 12 3-inch circles from the pie crust and 12 4-inch circles. Combine all other ingredients. Place approximately 1 tbsp of chicken mixture in the center of smallest pie crust circles. Moisten the edges with water and place larger circles on top. Use a fork to crimp the edges. This will keep the top crust from coming off of the smaller circles during baking. Pierce the top with a fork. Bake at 400 degrees F for 15 minutes or until lightly browned
