Mexican Chili Cornbread Bake


A delicious combination of cheese, chili and cornbread all in one easy to prepare casserole.



Ingredients:

  • 1 1/2 cup cornmeal
  • 1 1/2 cup hot water
  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 15 oz can crushed tomatoes
  • 2 tbsp chili powder
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 1/2 tsp garlic powder, divided
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/4 cup flour
  • 1 1/2 cup shredded cheddar cheese
  • 1 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup sugar
  • 1 cup sour cream
  • 2 eggs
  • 1/2 cup oil
  • 1/4 cup chopped jalapenos, optional

Method

Preheat oven to 400 degrees. In a small bowl, combine cornmeal and hot water, let stand for at least 5 minutes. Meanwhile brown ground beef and onions until meat is no longer pink. Stir in chili powder, oregano, cumin, 1/2 tsp garlic powder, sugar, salt, and flour. Place meat mixture in a greased 9 x 13 pan. Sprinkle shredded cheese over meat and set aside. In a large bowl, whisk together flour, baking powder, soda, salt, 1 tsp garlic powder, and sugar. Into cornmeal mixture, stir eggs, sour cream, and oil until smooth. Stir cornmeal mixture into flour mixture. Fold in chopped jalapenos if desired. Pour cornbread batter onto meat mixture. Bake at 400 degrees for 30-35 minutes until golden brown.

Notes: Remove seeds from jalapenos for a milder flavor.
