Mexican style potroast

Tired of the same old potroast? Spice it up, baby!


Garlic Infused Olive Oil
3 lb Beef Roast
2 Large Onions, sliced
2 Bell Peppers (orange, yellow or red),sliced
2 cans Mexican Style Stewed Tomatoes
Several Garlic Cloves, minced
**brown Rice To Serve It Over


Sear roast on all sides using the garlic infused olive oil.

In the bottom of the crockpot, put the sliced vegetables and the garlic.

Top with seared potroast.

Cook on high 5-6 hours or low 8-10 hours.

I serve mine with the sauce over long grain brown rice.
