Mexican Scrambled Eggs

This scrambled egg mixture also contains drained Rotel tomatoes, chilies, fresh tomato, ham and two kinds of cheeses.
 

Ingredients

  • 12 eggs, beaten
  • 1 10 oz can Rotel tomatoes with green chilies, drained
  • 2 slices of ham (tear or chop into small pieces)
  • 1 1/2 jalapeno peppers, seeded and diced
  • 1/2 teaspoon of minced dried onion
  • 1/4 teaspoon of garlic powder
  • 1 small tomato, chopped into small pieces
  • Slice of pepper-jack cheese, torn
  • 2 Tablespoons of shredded cheddar cheese
  • Dash of salt and pepper

Method

Mix all ingrediants in a large bowl, pour into a skillet; cook and scramble until eggs are just set.

 

Notes: If desired, use small chopped onion instead of minced dried onion.
