Mexican Pot Pie

Sick of the same boring Mexican Casserole? This Mexican Pot Pie will fill your tummy with warm delight! This is a simple twist on a traditional pot pie that your family and friends will be sure to love.

Ingredients:

Pillsbury Pie Crust- The Box of 2 Roll-out Crusts
Hamburger Meat- 1 Lbs
3 Fresh Garlic Cloves, chopped
Nature's Seasoning
Garlic Salt
Rotel Original Tomatoes- 1 Can
Black Beans- 1 Can
Cream of Chicken Soup- 1 Can
Shreaded Colby-jack Cheese- 1 Package
Tortilla Chips, or doritos
Julio's Seasoning Salt
Egg Yolk- 1

Directions:

Set pie crust out so they will begin to soften.

Brown Hamburger meat in a skillet with the chopped garlic cloves. While browning the meat sprinkle the top of meat with a dash of Natures Seasoning Salt and garlic salt.

After the hamburger meat is fully cooked stir in rotel, black beans, and cream of chicken soup.

Unwrap one pie crust and place inside a 2 qt round casserole pan that has been sprayed with Pam or any type of cooking spray. The pie crust should fully cover the casserole pan bottom and sides. Gently press pie crust into the pan.

Begin to layer. The hamburger meat filling will be the first layer; it will be followed by a small handful of the cheese, and then a layer of the chips. The chips can be broken down but not crushed. The best way is to get a handfull of chips and crush with your hands as you sprinkle on top of the cheese and hamburger meat filling. Repeat layering until you have reached the top of your casserole pan. The last layer should be the hamburger meat filling. Sprinkle with Julio's Seasoning salt.

Unroll your remaining pie crust and place on top of your dish. Press the top pie crust into the sides of the other pie crust. Begin to pinch the sides of the pie crust; make sure that your filling is sealed inside. The pie crust should cover the whole dish; you should not be able to see any of the filling. Beat your egg yolk and brush onto the pie crust. Slit the top of your pie crust. You can use an "x" shape or simply slit.

In your oven that has been preheated to 350, place your Mexican Pot Pie on a cookie sheet and begin to bake. After the first 30 mins you will want to cover the edges of your pie crust in foil or use a crust protector to prevent overbrowning. The crust will be a golden brown when done. Slice and serve.
