Mexican Pork Stew

This tasty, quick-to-make stew uses pork tenderloin, tomatoes, onion and green bell pepper. It has a Mexican flavor with seasonings of cumin, oregano and thyme.
Ingredients
- 1 pound pork tenderloin, cut into 1-inch cubes
- 1 tsp. cooking oil
- l large onion, coarsely chopped
- 1 tsp. minced garlic
- 1 14 1/2-oz. can tomatoes, chopped
- 1 green pepper, coarsely chopped
- 2 tbsp. chopped parsley
- 1/2 tsp. cumin
- 1/2 tsp. oregano
- 1/2 tsp. thyme
- Salt and pepper (to taste)

Method
Brown pork in oil in skillet. Add onion and garlic and cook, stirring, for 2 minutes. Stir in remaining ingredients. Bring to boil; reduce heat. Cover and simmer 15 minutes.
