Mexican Meltdown

Thick challah bread slices filled with onion, red and green bell pepper and cheddar cheese for a spicy Mexican inspired grilled cheese.
 

Ingredients

  • Challah bread
  • 1 tbsp green bell pepper
  • 1 tbsp red bell pepper
  • 1 tbsp chopped red onion
  • 1 clove fresh garlic
  • 2 tbsp hot sauce
  • Chives
  • 1 tsp carrot, julienne cut
  • 1 cup cheddar cheese, cubed
  • 1 tbsp grape seed oil
 
Method

Mix hot sauce, red onion, red and green bell peppers, garlic, carrot and cheddar cheese. Place grape seed oil in a sauce pan and top with mixture above. On a low heat allow cheese to start to melt. Then slice challah bread into 1 inch slices. Pour cheese mixture on one slice of bread and top it with other piece to form a sandwich. Grill until those lovely grill lines are formed, about 20 seconds. Top with chopped chives.

 

Notes: Serve with tortilla soup.
