Mexican Mango Casserole

A mix of sweet and spicy flavors with chicken, pineapple, mango, tomatoes, black beans, and cheddar cheese.
 

Ingredients

  • 2 10 once cans cream of chicken soup
  • 1/2 cup chopped cilantro
  • 1 small can crushed pineapple, drained
  • Optional: salt, pepper, and Tabasco
  • 6 tortillas
  • 1 can diced tomatoes, drained
  • 2 cups cooked chicken, chopped
  • 1 red onion, diced
  • 1 mango, peeled and chopped
  • 1 can black beans, drained and rinsed
  • 2 cups cheddar cheese

Method

Preheat oven to 350 degrees. Grease a 13 x 9 pan. Mix soup, pineapple, and cilantro together to prepare sauce. Add salt, pepper and Tabasco if desired. Lay two tortillas in bottom of pan. Sprinkle 1/2 of the following ingredients over tortillas; onion, chicken, beans and mangos. Pour 1/3 of sauce over mixture. Lay two more tortillas and sprinkle remaining chicken, onion, beans and mangos. Pour 1/2 of remaining sauce. Lay the last two tortillas and pour on the last bit of sauce. Cover with foil and bake for 45-60 minutes. Remove from oven and sprinkle with cheese. Replace foil and allow to sit for 5 minutes. Slice and serve.

 

Notes: This is a great recipe for any Mexican party. You will love this sweet mango and pineapple version of your average Mexican casserole.
