Mexican Corn Chowder

This great soup brings a lot of heat depending on the amount of cayenne pepper you want to add. With zucchini, corn and onion, this soup is hearty.
Ingredients
- 1 pound ground beef
- Vegetable oil, optional
- 2 cans Mexican style corn
- 3-4 zucchini, diced
- 1 4 ounce can green chiles
- 1 medium onion
- 1 can evaporated milk
- 1-2 tsp cayenne pepper
- Salt

Method
Saute onion in skillet until tender. Add ground beef and brown, using a small amount of oil, if needed. Remove from heat when done. In a large pot, add a splash of oil, zucchini, corn, and chiles. Saute until zucchini is tender, add beef mixture, evaporated milk and cayenne pepper. Salt as desired.
