Mexican Chopped Salad

Leftovers from your last taco fiesta? Try them on top of a bed of lettuce.
Ingredients
- 1 lb ground beef
- 1 envelope taco seasoning
- 1 head fresh lettuce, chopped into bite-size pieces
- 6 green onions, chopped
- 1/2 cup chopped celery
- 1 cup chopped fresh tomatoes
- 1 small (6 oz.) can sliced black olives
- 1 15-oz. can pinto beans, drained & rinsed
- 1 cup cheddar cheese, shredded
- 1/2 cup of your favorite salsa
- 1/2 cup sour cream
- 2 cup tortilla chips, lightly crushed

In a large skillet, brown ground beef; drain, then prepare according to directions on taco seasoning packet. Let cool while you prepare the rest of the salad ingredients. In a large bowl, combine lettuce, onions, celery, tomatoes, olives, and beans. In a smaller bowl, combine salsa and sour cream with a whisk; then add to larger bowl with lettuce mixture and toss well. Add cheese and the cooled beef and toss lightly to combine. Just before serving, top with crushed tortilla chips. Enjoy!
Notes: This is one of my family's favorite dinners - it's also a great way to use up leftover taco fixings!
