Mexican Chicken

Chicken coated with tortilla chips is cooked then broiled with salsa and cheese in the Mexican main dish.
Ingredients
- 1 lb. boneless skinless chicken breast
- 3 cups crushed tortilla chips
- 1 cup salsa (spiced to your taste)
- 2 tbs oil
- 1/2 cup mexican cheese, shredded
- sour cream to top, optional

Method
Take each chicken breast and slice them in half to make two thin breasts. Heat oil in skillet on medium heat. Coat chicken with tortilla chips (helps if you push the chicken real hard to make the chips stick in.) Cook in skillet until chips are lightly browned and the chicken is no longer pink, turning once. Place cooked chicken in 13 by 9 pan top with salsa and cheese and broil in oven till cheese is melted. Serve topped with sour cream.
