Lightly fried corn tortillas form cups for sausage and baked eggs in this spicy Mexican brunch recipe.
 

Ingredients

  • 1 pkg. corn tortillas
  • 3/4 lb. pork sausage
  • 1 t. Taco seasoning mix (see separate recipe)
  • 1/2 cup tomato sauce dozen eggs
  • 1 cup shredded Monteray Jack
  • Jar of Taco salsa

Method

Lightly fry tortillas on both sides in hot oil, keeping soft. Blot well with paper towel. Fit each carefully in muffin tin. Saute sausage until brown. Crumble and drain. Add taco seasoning and tomato sauce. Spoon some into each tortilla cup. Place in oven and heat to 325. Remove hot pan and place raw egg in each cup. Bake for 10 minutes. Remove and spoon warm salsa around edges. Top with cheese. Bake until eggs are set (5 min.).
