Mexican Beef and Spinach Casserole

If you like enchiladas you'll love this Mexican inspired casserole--layers of tortillas, ground chuck, and plenty of cheese.
Ingredients
- 11/2 lbs ground chuck
- 1 medium sweet onion, chopped
- 1 pkg taco seasoning mix
- 3/4 cup water
- 1 can chopped green chilies
- 1 10 oz can Old El Paso mild
- enchilada sauce
- 12 flour tortillas, for soft tacos or fajitas
- 1 9 oz box frozen spinach, thawed
- 3 cups shredded Mexican blend cheese
- 1 cup sour cream
- 2 green onions, chopped
- 2 jalapeno or chile peppers for
- garnish

Method
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with cooking spray. In a large skillet cook ground chuck and onion until meat is browned. Drain and stir in taco seasoning mix, water, and green chilies. Simmer 5 minutes then set aside. Pour 1/4 of enchilada sauce in casserole dish. Lay 4 tortillas on sauce, overlapping. Squeeze water out of spinach and stir into meat mixture. Spread half of mixture over tortillas. Top with 1 cup cheese, 1/3 cup enchilada sauce and then 4 tortillas. Repeat with remaining meat, 1 cup cheese, sour cream and 1/3 cup enchilada sauce. End with last 4 tortillas, remaining sauce, cheese and onions. Bake 20 minutes covered with aluminum foil and then 20 minutes uncovered. Remove from oven and let set 5-10 minutes. Garnish with jalapenos in center of dish. Cut into squares and serve.
Notes: This is just a nice warm csserole that is a little different with spinach--very satisfying and tastes great.
