Mango and Corn Salsa

A colorful, healthy salsa with corn, maango, black beans and tomatoes.
 

Ingredients

  • 4 ears corn
  • 1 mango
  • 1 can black beans
  • 3 plum tomatoes
  • 1/2 red onion
  • 2 cloves garlic
  • 2 green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped Italian parsley
  • 3 lemons, juiced
  • 1/4 cup vegetable oil
  • 1 tbsp balsamic glaze
  • 2 tsp mustard
  • 2 jalapenos
  • 2 tsp kosher salt
  • 4 leaves butter lettuce
  • Parsley or cilantro for garnish

Method

Boil corn until fully cooked then cool in refrigerator. Meanwhile, chop garlic fine, or squeeze through garlic press and place in a medium mixing bowl. Add mustard, lemon juice and balsamic glaze then whisk until well combined. While whisking, slowly add oil until well incorporated then set aside. Chop mango into medium cubes. Dice onions, green onions, tomatoes, and jalapenos. Drain black beans, rinse with cold water, then drain well. Mix all ingredients together and toss. Add salt, 1 tsp at a time, to taste. Add fresh ground black pepper to taste. Place butter lettuce on serving plate. Spoon on salsa and garnish with a sprinkle of fresh parsley or cilantro.

 

Notes: Balsamic glaze can be purchased at any grocery store in the vinegar aisle. This may also be prepared at home. Balsamic vinegar simmering until reduced to thick syrup.
