Low Fat Chimichangas

Fat free sour cream, cheese, and refried beans make this specialty a bit healthier.
 

Ingredients

  • 1/2 lb extra lean ground beef
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 (1.25 oz) pkg taco seasoning mix
  • 1 (8 oz) can tomato sauce
  • 2 tbsp chopped green chilies
  • 1 (16 oz) can fat-free refried beans
  • 1 cup shredded reduced fat cheddar cheese
  • 10 (8-inch) 98% fat-free flour tortillas
  • 3/4 cup fat-free sour cream
  • 3/4 salsa

Method

Preheat oven to 400. Spray a baking sheet with nonstick spray; set aside. Spray a large skillet with nonstick spray; put over medium-high heat. Add the meat, onion powder and garlic powder. Cook, breaking up meat until browned. Stir in taco seasoning, tomato sauce, chilies, and beans; bring to a boil. Reduce heat and simmer, uncovered until mixture thickens slightly, about 5 minutes. Remove from heat and stir in the cheese. Meanwhile, warm the tortillas wrapped in a paper towel in the microwave for 45 seconds. Spoon 1/2 cup of the filling into the center of each tortilla. Fold in sides, then roll to enclose filling. Place seam-side down on baking sheet. Lightly spray tops of tortillas with butter nonstick spray. Bake until golden & crisp, about 20 minutes. Do not turn. Remove from the oven and place on plates. Top each with 1 tbsp salsa and 1 tbsp sour cream.

 

Notes: You can use shredded chicken instead of the beef.
